"MONNIERES - ST FIACRE" cru communal (village cru)

Grape Variety Melon de Bourgogne
Origin - Terroir Monnières - St Fiacre is the result of a process of recognition of village cru. This exceptional wine is the result of the agreement of several winegrowers and their willingness to come together around a unity of land. A unique terroir, our hills are composed of a Gneiss bedrock on sandy loam soils.
Vinification Coming from old vines and following a mastered production, the wine is aged on its lees for 30 months with regular stirring.

Tasting Power, aromatic complexity and structure are the qualities of this great wine with good ageing capacity. It is best enjoyed between 12 ° and 14 °.
Food pairing Monnières - St Fiacre accompanies all your noble fish and white with elegance. You can also enjoy it with cheese and surprise your friends as an aperitif. Served in a carafe, it expresses its full power even better after aeration.

Cuvée Tradition

Grape Variety Melon de Bourgogne
Origin - Terroir With the common characteristic of being on shallow sandy loam soils, some of the vines are grown on soils whose bedrock is gneiss producing fruity and floral wines. The other part is on gabbros bringing more richness and ampleness. This cuvée "Tradition" comes from the blending of both terroirs.
Vinification In the tradition of our Domaine, these grapes from the slopes of the Sèvre were harvested at full maturity and vinified by terroir. The fermentation is carried out at low temperature to develop the flavours. After aging on its lees all winter long, the wine was finally blended and bottled to obtain this cuvée.

Tasting The cuvée " Tradition " is a high-end Muscadet with a clear bright golden robe , a nose of citrus on a mineral background with lots of freshness . On the mouth, it is sharp, nervous, fruity with iodine notes and long on the mouth. This wine is best enjoyed between 8 ° and 10 °.
Food pairing This Muscadet is perfect as an aperitif, or served with seafood and fish.

La Jeannière

Grape Variety Melon de Bourgogne
Origin - Terroir The terroir of the locality "The Jeannière" is exceptional. Facing south, the vines are grown on a very shallow sandy loam soil. The shale schist bedrock nearby gives it a certain precocity and allows to obtain an excellent fruity "Muscadet Sèvre et Maine sur Lie".
Vinification In the tradition of our Domaine, these grapes from the slopes of the Sèvre were harvested at full maturity. The fermentation is carried out at low temperature to develop the flavours. This cuvée was obtained and being aged on its lees all winter long and regularly stirred.

Tasting The terroir of the locality "The Jeannière" offers a tasty and fruity wine with notes of citrus and fresh fruit with a beautiful minerality . This wine is best enjoyed between 8 ° and 10 °.
Food pairing This wine is the ideal accompaniment to dishes such as seafood, fish in sauce, white meat and also as an aperitif.

Noblesse des Dames

Appellation Muscadet Sèvre et Maine "aged in oak barrels" Noblesse-des-Dames
Grape Variety Melon de Bourgogne
Origin - Terroir "La Noblesse des Dames" comes from a selection of old vines. These plots are always harvested at the end of the harvest. They produce highly concentrated grapes suitable for oak barrel ageing.
Vinification In the tradition of our Domaine, these grapes from the slopes of the Sèvre were harvested at full maturity. The vinification and aging of this wine takes place in oak barrels for 10-12 months.

Tasting This wine is finely woody, while respecting the flavours of Melon de Bourgogne. This wine is best enjoyed between 9 ° and 10 °.
Food pairing This wine is the ideal accompaniment to dishes such as scallops, fish in sauce (Beurre blanc Nantais - Pike in white butter sauce, a typical dish from Nantes), white meat and cheese. "La Noblesse des Dames" can also be enjoyed as an aperitif.

Vin de Pays Rosé

Origin - Terroir The southern exposure of this terroir makes it exceptional. The vines are grown on a very shallow sandy loam soil. The shale schist bedrock nearby gives it a certain precocity and allows to obtain a floral and aromatic rosé.
Vinification In the tradition of our Domaine, these grapes from the slopes of the Sèvre were harvested at full maturity. After a slight maceration giving it a pale colour, the fermentation is carried out at low temperature to develop the flavours.
